Ingredients:
- 1 cup (2 sticks/227g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ¼ cups (281g) all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 8 ounces (227g) cream cheese, softened
- ½ cup (1 stick/113g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 teaspoon vanilla extract
- 1 pint strawberries, hulled and sliced
- 1 pint blueberries
- 1 pint raspberries
- 2 kiwis, peeled and sliced
- 1 mango, peeled and diced
- ½ cup mandarin orange segments, drained
- Optional: Apricot jam or apple jelly, melted, for glazing
Instructions:
- Cream together butter and sugar. Beat in egg and vanilla. Gradually add dry ingredients until just combined.
- Form the dough into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
- Preheat oven to 375°F (190°C). Roll out dough on a lightly floured surface to form a large circle (about 12-14 inches in diameter).
- Transfer dough to a parchment-lined baking sheet. Bake for 12-15 minutes, or until lightly golden brown around the edges. Let cool completely.
- Beat cream cheese and butter until smooth and creamy. Gradually add powdered sugar and vanilla extract until well combined.
- Spread the cream cheese frosting evenly over the cooled crust.
- Artfully arrange the sliced fruit on top of the frosting in a rainbow pattern or any design you like.
- If desired, brush the fruit with melted apricot jam or apple jelly for added shine and flavor.
- Chill the pizza for at least 30 minutes before slicing and serving.
