Ingredients:

  • 1 cup (2 sticks/227g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ¼ cups (281g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 8 ounces (227g) cream cheese, softened
  • ½ cup (1 stick/113g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pint strawberries, hulled and sliced
  • 1 pint blueberries
  • 1 pint raspberries
  • 2 kiwis, peeled and sliced
  • 1 mango, peeled and diced
  • ½ cup mandarin orange segments, drained
  • Optional: Apricot jam or apple jelly, melted, for glazing

Instructions:

  1. Cream together butter and sugar. Beat in egg and vanilla. Gradually add dry ingredients until just combined.
  2. Form the dough into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
  3. Preheat oven to 375°F (190°C). Roll out dough on a lightly floured surface to form a large circle (about 12-14 inches in diameter).
  4. Transfer dough to a parchment-lined baking sheet. Bake for 12-15 minutes, or until lightly golden brown around the edges. Let cool completely.
  5. Beat cream cheese and butter until smooth and creamy. Gradually add powdered sugar and vanilla extract until well combined.
  6. Spread the cream cheese frosting evenly over the cooled crust.
  7. Artfully arrange the sliced fruit on top of the frosting in a rainbow pattern or any design you like.
  8. If desired, brush the fruit with melted apricot jam or apple jelly for added shine and flavor.
  9. Chill the pizza for at least 30 minutes before slicing and serving.
