Ingredients:
- 1 pound raw almonds
- 3 tablespoons tamari or soy sauce
- 2 tablespoons pure maple syrup
- 1 teaspoon olive oil
- ½ teaspoon sriracha sauce (adjust to taste)
- Sea salt, to taste
- Fresh cracked black pepper, to taste
Instructions:
- Preheat Oven: Place a rack in the upper third of your oven and preheat it to 350°F (175°C).
- Prepare Baking Sheet: Line a rimmed baking sheet with parchment paper and spread the raw almonds in an even layer across the sheet.
- Roast Almonds: Roast the almonds for about 12 to 15 minutes, or until they are browned and fragrant.
- Make Tamari Mixture: While the almonds roast, whisk together tamari (or soy sauce), maple syrup, olive oil, and sriracha in a small bowl.
- Coat Almonds: Once toasted, remove the almonds from the oven and pour the tamari mixture over them while they are still warm. Toss well until all of the almonds are lightly coated.
- Season & Finish Roasting: Sprinkle with sea salt and fresh cracked black pepper before returning them to the oven. Roast for another 12 to 15 minutes, tossing once during this time for even cooking.
- Cool & Store: After roasting is complete, remove from oven; sprinkle with a bit more salt and pepper if desired. Allow cooling before serving.
