Ingredients:

  • 1 pound raw almonds
  • 3 tablespoons tamari or soy sauce
  • 2 tablespoons pure maple syrup
  • 1 teaspoon olive oil
  • ½ teaspoon sriracha sauce (adjust to taste)
  • Sea salt, to taste
  • Fresh cracked black pepper, to taste

Instructions:

  1. Preheat Oven: Place a rack in the upper third of your oven and preheat it to 350°F (175°C).
  2. Prepare Baking Sheet: Line a rimmed baking sheet with parchment paper and spread the raw almonds in an even layer across the sheet.
  3. Roast Almonds: Roast the almonds for about 12 to 15 minutes, or until they are browned and fragrant.
  4. Make Tamari Mixture: While the almonds roast, whisk together tamari (or soy sauce), maple syrup, olive oil, and sriracha in a small bowl.
  5. Coat Almonds: Once toasted, remove the almonds from the oven and pour the tamari mixture over them while they are still warm. Toss well until all of the almonds are lightly coated.
  6. Season & Finish Roasting: Sprinkle with sea salt and fresh cracked black pepper before returning them to the oven. Roast for another 12 to 15 minutes, tossing once during this time for even cooking.
  7. Cool & Store: After roasting is complete, remove from oven; sprinkle with a bit more salt and pepper if desired. Allow cooling before serving.
