Ingredients:
- 1.5 lbs (680g) broccolini, trimmed
- 2 tablespoons (30ml) olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced (about 2 tablespoons juice)
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 2 tablespoons grated Parmesan cheese (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash and thoroughly dry the broccolini. If the stalks are very thick, you can halve them lengthwise.
- In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes (if using), salt, and pepper.
- Place the broccolini in the large bowl and pour the dressing over it. Toss well to ensure the broccolini is evenly coated.
- Spread the broccolini in a single layer on the baking sheet.
- Roast for 15-20 minutes, or until the broccolini is tender-crisp and lightly browned, flipping halfway through.
- Transfer the roasted broccolini to a serving dish. Sprinkle with Parmesan cheese (if using) and serve immediately.
