Ingredients:

  • 1.5 lbs (680g) broccolini, trimmed
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced (about 2 tablespoons juice)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash and thoroughly dry the broccolini. If the stalks are very thick, you can halve them lengthwise.
  3. In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes (if using), salt, and pepper.
  4. Place the broccolini in the large bowl and pour the dressing over it. Toss well to ensure the broccolini is evenly coated.
  5. Spread the broccolini in a single layer on the baking sheet.
  6. Roast for 15-20 minutes, or until the broccolini is tender-crisp and lightly browned, flipping halfway through.
  7. Transfer the roasted broccolini to a serving dish. Sprinkle with Parmesan cheese (if using) and serve immediately.
