Ingredients:

  • 2 whole bronzini, cleaned and scaled (approximately 1 lb each)
  • 3 tablespoons olive oil
  • 1 lemon, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the bronzini under cold water and pat them dry with paper towels. Using a sharp knife, make three diagonal slashes on each side of the fish, about half an inch deep.
  3. In a small bowl, combine olive oil, minced garlic, chopped rosemary, thyme leaves, salt, and pepper. Mix well to create a marinade.
  4. Rub the marinade all over both sides of each bronzini and inside their cavities. Ensure you also stuff some of the mixture into the slashes made earlier for maximum flavor.
  5. Place several lemon slices inside the cavity of each fish.
  6. Line a baking sheet or dish with parchment paper or lightly grease it with additional olive oil to prevent sticking.
  7. If desired, garnish with freshly chopped parsley before serving.
