Ingredients:
- 2 whole bronzini, cleaned and scaled (approximately 1 lb each)
- 3 tablespoons olive oil
- 1 lemon, thinly sliced
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Rinse the bronzini under cold water and pat them dry with paper towels. Using a sharp knife, make three diagonal slashes on each side of the fish, about half an inch deep.
- In a small bowl, combine olive oil, minced garlic, chopped rosemary, thyme leaves, salt, and pepper. Mix well to create a marinade.
- Rub the marinade all over both sides of each bronzini and inside their cavities. Ensure you also stuff some of the mixture into the slashes made earlier for maximum flavor.
- Place several lemon slices inside the cavity of each fish.
- Line a baking sheet or dish with parchment paper or lightly grease it with additional olive oil to prevent sticking.
- If desired, garnish with freshly chopped parsley before serving.
