Ingredients:

  • 1 medium onion squash (about 2 lbs), peeled and diced
  • 1 large onion, thinly sliced
  • 3 tablespoons olive oil
  • 2 teaspoons fresh thyme leaves or 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • (Optional) 1 tablespoon maple syrup for added sweetness

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Peel the onion squash and cut it into cubes. Thinly slice the onion.
  3. In a large bowl, combine the diced onion squash, sliced onions, olive oil, thyme, salt, pepper, and maple syrup if using. Toss until all vegetables are well coated.
  4. Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for about 25–30 minutes or until both the squash and onions are tender and caramelized. Stir halfway through cooking to ensure even roasting.
  6. Remove from oven and let cool slightly before serving. Enjoy as a side dish or toss into salads!
