Ingredients:
- 1 medium onion squash (about 2 lbs), peeled and diced
- 1 large onion, thinly sliced
- 3 tablespoons olive oil
- 2 teaspoons fresh thyme leaves or 1 teaspoon dried thyme
- Salt and pepper, to taste
- (Optional) 1 tablespoon maple syrup for added sweetness
Instructions:
- Preheat your oven to 400°F (200°C).
- Peel the onion squash and cut it into cubes. Thinly slice the onion.
- In a large bowl, combine the diced onion squash, sliced onions, olive oil, thyme, salt, pepper, and maple syrup if using. Toss until all vegetables are well coated.
- Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 25–30 minutes or until both the squash and onions are tender and caramelized. Stir halfway through cooking to ensure even roasting.
- Remove from oven and let cool slightly before serving. Enjoy as a side dish or toss into salads!
