Ingredients:
- 1.5 lbs zucchini, sliced into 1/4-inch rounds
- 2 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1/4 cup grated Parmesan cheese
Instructions:
- Wash and dry the zucchini thoroughly to ensure proper browning. Slice into uniform 1/4-inch rounds or half-moons.
- Place a large skillet over medium-high heat. Add olive oil and heat until shimmering.
- Arrange zucchini in a single layer in the pan. Sear undisturbed for 3–4 minutes until a deep golden-brown crust forms.
- Flip the zucchini slices and immediately add minced garlic, salt, and pepper.
- Sauté for another 2–3 minutes, tossing occasionally, until the garlic is fragrant and zucchini is tender.
- Remove from heat and drizzle with fresh lemon juice and Parmesan cheese before serving.
