Ingredients:

  • 1.5 lbs zucchini, sliced into 1/4-inch rounds
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Wash and dry the zucchini thoroughly to ensure proper browning. Slice into uniform 1/4-inch rounds or half-moons.
  2. Place a large skillet over medium-high heat. Add olive oil and heat until shimmering.
  3. Arrange zucchini in a single layer in the pan. Sear undisturbed for 3–4 minutes until a deep golden-brown crust forms.
  4. Flip the zucchini slices and immediately add minced garlic, salt, and pepper.
  5. Sauté for another 2–3 minutes, tossing occasionally, until the garlic is fragrant and zucchini is tender.
  6. Remove from heat and drizzle with fresh lemon juice and Parmesan cheese before serving.
