Ingredients:

  • 4 bone-in chicken breasts (about 6-8 ounces each, 170-225g)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon garlic powder (5g)
  • 1 teaspoon onion powder (5g)
  • 1 teaspoon paprika (5g)
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter, softened (56g)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves (15g, or 1 teaspoon dried thyme)
  • Zest of 1 lemon
  • 1 tablespoon fresh parsley, chopped (15g)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken breasts dry with paper towels and place in a baking dish.
  3. Drizzle the chicken with olive oil and sprinkle garlic powder, onion powder, paprika, salt, and pepper evenly over the chicken.
  4. In a mixing bowl, combine softened butter, minced garlic, thyme, lemon zest, and parsley until well-blended to prepare the herb butter.
  5. Use a pastry brush to spread the herb butter mixture on the chicken breasts.
  6. Place the chicken in the preheated oven and bake for 50-60 minutes. Use a meat thermometer to check; chicken should reach 165°F (74°C).
  7. Remove from the oven and let the chicken rest for 5-10 minutes before serving.
