Ingredients:
- 4 bone-in chicken breasts (about 6-8 ounces each, 170-225g)
- 2 tablespoons olive oil (30ml)
- 1 teaspoon garlic powder (5g)
- 1 teaspoon onion powder (5g)
- 1 teaspoon paprika (5g)
- Salt and freshly ground black pepper, to taste
- 4 tablespoons unsalted butter, softened (56g)
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves (15g, or 1 teaspoon dried thyme)
- Zest of 1 lemon
- 1 tablespoon fresh parsley, chopped (15g)
Instructions:
- Preheat the oven to 375°F (190°C).
- Pat the chicken breasts dry with paper towels and place in a baking dish.
- Drizzle the chicken with olive oil and sprinkle garlic powder, onion powder, paprika, salt, and pepper evenly over the chicken.
- In a mixing bowl, combine softened butter, minced garlic, thyme, lemon zest, and parsley until well-blended to prepare the herb butter.
- Use a pastry brush to spread the herb butter mixture on the chicken breasts.
- Place the chicken in the preheated oven and bake for 50-60 minutes. Use a meat thermometer to check; chicken should reach 165°F (74°C).
- Remove from the oven and let the chicken rest for 5-10 minutes before serving.
