Ingredients:
- 1 cup low-fat cottage cheese
- 1 tsp extra virgin olive oil
- 1/2 tsp lemon juice
- 1/4 cup English cucumber, finely diced
- 2 tbsp cherry tomatoes, quartered
- 1 tbsp red onion, minced
- 1 tbsp fresh chives, chopped
- 1 tsp Everything Bagel seasoning
- 1 pinch cracked black pepper
- 1/4 tsp red pepper flakes
Instructions:
- Scoop the cottage cheese into a medium mixing bowl. Note: Ensure it's chilled for the best texture
- Stir in the olive oil and lemon juice. Stir for about 30 seconds until the mixture is glossy and integrated.
- Dice the English cucumber into small, uniform cubes. Note: Keep them small so they fit on a spoon with the cheese
- Quarter the cherry tomatoes. Ensure they are cut into four equal pieces for a consistent bite.
- Mince the red onion finely. Note: Very small pieces prevent the onion from overpowering the bowl
- Arrange the diced cucumber, quartered tomatoes, and minced red onion in distinct sections on top of the cheese base. Avoid stirring them in to keep the colors bright.
- Sprinkle the Everything Bagel seasoning evenly across the top.
- Add the cracked black pepper and red pepper flakes. Distribute them across the vegetables for visual appeal.
- Scatter the fresh chives over the bowl. The green should pop against the red tomatoes.
