Ingredients:

  • 1 cup low-fat cottage cheese
  • 1 tsp extra virgin olive oil
  • 1/2 tsp lemon juice
  • 1/4 cup English cucumber, finely diced
  • 2 tbsp cherry tomatoes, quartered
  • 1 tbsp red onion, minced
  • 1 tbsp fresh chives, chopped
  • 1 tsp Everything Bagel seasoning
  • 1 pinch cracked black pepper
  • 1/4 tsp red pepper flakes

Instructions:

  1. Scoop the cottage cheese into a medium mixing bowl. Note: Ensure it's chilled for the best texture
  2. Stir in the olive oil and lemon juice. Stir for about 30 seconds until the mixture is glossy and integrated.
  3. Dice the English cucumber into small, uniform cubes. Note: Keep them small so they fit on a spoon with the cheese
  4. Quarter the cherry tomatoes. Ensure they are cut into four equal pieces for a consistent bite.
  5. Mince the red onion finely. Note: Very small pieces prevent the onion from overpowering the bowl
  6. Arrange the diced cucumber, quartered tomatoes, and minced red onion in distinct sections on top of the cheese base. Avoid stirring them in to keep the colors bright.
  7. Sprinkle the Everything Bagel seasoning evenly across the top.
  8. Add the cracked black pepper and red pepper flakes. Distribute them across the vegetables for visual appeal.
  9. Scatter the fresh chives over the bowl. The green should pop against the red tomatoes.
