Ingredients:

  • 2 pounds (900g) bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 1/2 cup (120ml) honey
  • 1/4 cup (60ml) soy sauce (low-sodium, if desired)
  • 4 cloves garlic, minced
  • 1 tablespoon (15ml) apple cider vinegar
  • 1 teaspoon (5g) ground ginger
  • 1/4 teaspoon (1g) red pepper flakes (optional)
  • Fresh parsley, chopped (optional)

Instructions:

  1. Pat chicken thighs dry and season with salt and pepper.
  2. In a bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, ground ginger, and red pepper flakes.
  3. Place seasoned chicken thighs in the slow cooker. Pour the honey garlic sauce over the chicken, ensuring they are well coated.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender and reaches an internal temperature of 165°F (75°C).
  5. Once cooked, sprinkle with fresh parsley and serve with your choice of sides.
