Ingredients:

  • 1 pound (450 g) ground beef, preferably lean
  • 1 can (15 ounces or 425 g) black beans, drained and rinsed
  • 1 cup (150 g) corn kernels (fresh, frozen, or canned)
  • 1 medium red bell pepper, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1 cup (240 ml) salsa
  • 2 cups (200 g) shredded cheddar cheese
  • 1 cup (240 ml) sour cream
  • 6 corn tortillas, cut into quarters

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Sauté onion and garlic in a large skillet over medium heat until translucent.
  3. Add ground beef and cook until browned, breaking it apart with a spoon. Stir in taco seasoning and cook for an additional 2 minutes.
  4. Combine the black beans, corn, bell pepper, and salsa into the beef mixture.
  5. Layer the bottom of the casserole dish with half of the tortilla pieces.
  6. Spread half of the beef mixture over the tortillas, followed by half of the sour cream and half of the cheese.
  7. Repeat the layers with remaining tortillas, beef mixture, sour cream, and top with remaining cheese.
  8. Bake uncovered for 25-30 minutes, or until the cheese is bubbly and golden brown.
