Ingredients:
- 1 pound (450 g) ground beef, preferably lean
- 1 can (15 ounces or 425 g) black beans, drained and rinsed
- 1 cup (150 g) corn kernels (fresh, frozen, or canned)
- 1 medium red bell pepper, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1 cup (240 ml) salsa
- 2 cups (200 g) shredded cheddar cheese
- 1 cup (240 ml) sour cream
- 6 corn tortillas, cut into quarters
Instructions:
- Preheat the oven to 350°F (175°C).
- Sauté onion and garlic in a large skillet over medium heat until translucent.
- Add ground beef and cook until browned, breaking it apart with a spoon. Stir in taco seasoning and cook for an additional 2 minutes.
- Combine the black beans, corn, bell pepper, and salsa into the beef mixture.
- Layer the bottom of the casserole dish with half of the tortilla pieces.
- Spread half of the beef mixture over the tortillas, followed by half of the sour cream and half of the cheese.
- Repeat the layers with remaining tortillas, beef mixture, sour cream, and top with remaining cheese.
- Bake uncovered for 25-30 minutes, or until the cheese is bubbly and golden brown.
