Ingredients:

  • 1 tbsp white miso paste
  • 1 tsp maple syrup
  • 1/2 tsp toasted sesame oil
  • 1 cup unsweetened soy milk
  • 3 tbsp chia seeds
  • 1/8 tsp black pepper
  • 1 tsp toasted sesame seeds
  • 1 stalk green onion, sliced
  • 1/2 tsp furikake

Instructions:

  1. In a small mixing bowl, combine the white miso paste, maple syrup, toasted sesame oil, and 1/2 cup of unsweetened soy milk. Whisk vigorously until the miso is completely dissolved and the mixture is smooth.
  2. Stir in the remaining 1/2 cup of unsweetened soy milk and the black pepper. Slowly whisk in the chia seeds. Let the mixture sit for 5 minutes, then stir again to prevent seeds from clumping at the bottom.
  3. Pour the mixture into a glass mason jar and seal with a lid. Refrigerate for at least 4 hours, or overnight, to allow the pudding to set.
  4. Before serving, give the pudding a quick stir. Top with sliced green onions, toasted sesame seeds, and furikake.
