Ingredients:

  • 6 large eggs (300g)
  • 1/4 cup milk (60ml)
  • 1/2 teaspoon salt (3g)
  • 1/4 teaspoon black pepper (1g)
  • 1 tablespoon olive oil (15ml)
  • 8 oz (225g) cooked sausage (Italian or breakfast sausage, crumbled)
  • 1 cup shredded sharp cheddar cheese (100g)
  • 1/2 cup diced bell pepper (75g)
  • 1/4 cup diced onion (40g)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  3. Heat olive oil in the skillet over medium heat. Add diced onion and bell pepper. Sauté until the onion is translucent.
  4. Add the crumbled sausage, cooking until heated through.
  5. Pour the egg mixture over the sausage and vegetables, stirring gently to combine.
  6. Sprinkle the shredded cheddar cheese on top.
  7. Cook for 2-3 minutes until the edges start to set.
  8. Place the skillet in the preheated oven. Bake for 15 minutes or until the frittata is set in the center and slightly golden on top.
  9. Allow the frittata to cool for a few minutes before slicing. Serve warm.
