Ingredients:

  • 4 large boneless, skinless chicken breasts (approximately 2 pounds / 900 grams)
  • 1 teaspoon salt (5 grams)
  • ½ teaspoon black pepper (2 grams)
  • 1 tablespoon olive oil (15 ml)
  • Zest and juice of 1 large lemon
  • 4 cloves garlic, minced
  • 1 cup (240 ml) low-sodium chicken broth
  • 2 teaspoons dried Italian herbs (basil, oregano, thyme) (10 grams)
  • 2 tablespoons fresh parsley, chopped (optional for garnishing)

Instructions:

  1. Rub chicken breasts with salt and pepper. Drizzle with olive oil.
  2. In a mixing bowl, combine lemon zest, lemon juice, minced garlic, chicken broth, and dried herbs.
  3. Place the seasoned chicken breasts in the slow cooker. Pour the lemon sauce over the chicken.
  4. Cover and cook on high for 4 hours or low for 6-7 hours until tender.
  5. Remove chicken and garnish with chopped parsley. Serve with sauce poured over the top.
