Ingredients:
- 4 large boneless, skinless chicken breasts (approximately 2 pounds / 900 grams)
- 1 teaspoon salt (5 grams)
- ½ teaspoon black pepper (2 grams)
- 1 tablespoon olive oil (15 ml)
- Zest and juice of 1 large lemon
- 4 cloves garlic, minced
- 1 cup (240 ml) low-sodium chicken broth
- 2 teaspoons dried Italian herbs (basil, oregano, thyme) (10 grams)
- 2 tablespoons fresh parsley, chopped (optional for garnishing)
Instructions:
- Rub chicken breasts with salt and pepper. Drizzle with olive oil.
- In a mixing bowl, combine lemon zest, lemon juice, minced garlic, chicken broth, and dried herbs.
- Place the seasoned chicken breasts in the slow cooker. Pour the lemon sauce over the chicken.
- Cover and cook on high for 4 hours or low for 6-7 hours until tender.
- Remove chicken and garnish with chopped parsley. Serve with sauce poured over the top.
