Instructions:

  1. Chop the spinach and set aside. Crumble the feta cheese if not pre-crumbled.
  2. In a medium bowl, crack the eggs, add salt and pepper, and whisk until well combined.
  3. Place a non-stick skillet over medium heat and add olive oil, ensuring it coats the base.
  4. Add the chopped spinach to the skillet; sauté for 1-2 minutes until wilted.
  5. Pour the eggs into the skillet with spinach. Stir gently with a spatula, cooking until just set but still creamy (about 3-4 minutes).
  6. Gently fold in the crumbled feta cheese, cooking just until warmed.
  7. Transfer to plates, garnishing with fresh herbs and sliced avocado if desired.
