Ingredients:

  • 1 (15-ounce/425g) can chickpeas, drained and rinsed very well
  • 1 tablespoon (15ml) olive oil
  • ½ teaspoon (2.5ml) kosher salt
  • ¼ teaspoon (1.25ml) garlic powder
  • ¼ teaspoon (1.25ml) smoked paprika
  • ⅛ teaspoon (0.6ml) cayenne pepper (optional)

Instructions:

  1. Drain and rinse the chickpeas thoroughly. Spread them out on a kitchen towel (or paper towels) and gently rub to remove as much of the outer skins as possible. Pat them very dry.
  2. In a mixing bowl, toss the dried chickpeas with olive oil, salt, garlic powder, smoked paprika, and cayenne pepper (if using). Make sure they're evenly coated.
  3. Spread the seasoned chickpeas in a single layer on the baking sheet.
  4. Bake in preheated oven at 400°F (200°C) for 25-30 minutes, or until the chickpeas are golden brown and crispy. Shake the pan halfway through to ensure even roasting.
  5. Remove from the oven and let cool slightly before serving. They'll crisp up even more as they cool.
