Ingredients:
- 1 (15-ounce/425g) can chickpeas, drained and rinsed very well
- 1 tablespoon (15ml) olive oil
- ½ teaspoon (2.5ml) kosher salt
- ¼ teaspoon (1.25ml) garlic powder
- ¼ teaspoon (1.25ml) smoked paprika
- ⅛ teaspoon (0.6ml) cayenne pepper (optional)
Instructions:
- Drain and rinse the chickpeas thoroughly. Spread them out on a kitchen towel (or paper towels) and gently rub to remove as much of the outer skins as possible. Pat them very dry.
- In a mixing bowl, toss the dried chickpeas with olive oil, salt, garlic powder, smoked paprika, and cayenne pepper (if using). Make sure they're evenly coated.
- Spread the seasoned chickpeas in a single layer on the baking sheet.
- Bake in preheated oven at 400°F (200°C) for 25-30 minutes, or until the chickpeas are golden brown and crispy. Shake the pan halfway through to ensure even roasting.
- Remove from the oven and let cool slightly before serving. They'll crisp up even more as they cool.
