Ingredients:

  • 2 medium sweet potatoes (approx. 500g / 1 lb), peeled
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon cornstarch (4g)
  • 1/2 teaspoon smoked paprika (2g)
  • 1/4 teaspoon garlic powder (1g)
  • 1/4 teaspoon onion powder (1g)
  • 1/4 teaspoon cayenne pepper (optional, for a kick) (1g)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Peel sweet potatoes and cut them into fries of uniform thickness (about 1/4-inch thick).
  2. Soak the fries in cold water for at least 30 minutes (up to 2 hours) to remove excess starch. Drain well and pat very dry with paper towels.
  3. In a large bowl, toss the dried sweet potato fries with olive oil, cornstarch, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper until evenly coated.
  4. Preheat air fryer to 400°F (200°C). Arrange the fries in a single layer in the air fryer basket (you may need to do this in batches).
  5. Air fry for 15-20 minutes, flipping halfway through, until the fries are golden brown and crispy.
  6. Season with additional salt, if desired, and serve hot.
