Ingredients:
- 2 medium sweet potatoes (approx. 500g / 1 lb), peeled
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon cornstarch (4g)
- 1/2 teaspoon smoked paprika (2g)
- 1/4 teaspoon garlic powder (1g)
- 1/4 teaspoon onion powder (1g)
- 1/4 teaspoon cayenne pepper (optional, for a kick) (1g)
- Salt and freshly ground black pepper to taste
Instructions:
- Peel sweet potatoes and cut them into fries of uniform thickness (about 1/4-inch thick).
- Soak the fries in cold water for at least 30 minutes (up to 2 hours) to remove excess starch. Drain well and pat very dry with paper towels.
- In a large bowl, toss the dried sweet potato fries with olive oil, cornstarch, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper until evenly coated.
- Preheat air fryer to 400°F (200°C). Arrange the fries in a single layer in the air fryer basket (you may need to do this in batches).
- Air fry for 15-20 minutes, flipping halfway through, until the fries are golden brown and crispy.
- Season with additional salt, if desired, and serve hot.
