Ingredients:
- 2 cups (260g) whole wheat flour (spooned & leveled)
- 1 Tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 6 Tablespoons (85g) unsalted butter, melted and slightly cooled
- 2 large eggs, at room temperature
- 2 Tablespoons (25g) packed light or dark brown sugar
- 1 and 3/4 cup (420ml) buttermilk
- 1 teaspoon pure vanilla extract
Instructions:
- Preheat waffle maker to medium-high. Preheat oven to 200°F (93°C). Place wire rack on a baking sheet; set aside.
- In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
- In another large bowl, whisk the melted butter, eggs, and brown sugar. Then whisk in the buttermilk and vanilla until combined.
- Pour the wet ingredients into the dry ingredients. Gently whisk until just combined. Small lumps are okay!
- Grease the preheated waffle maker. Pour about 1/3 cup of batter (or amount specified by your waffle maker) into each well. Close the lid and cook according to waffle maker instructions, until golden brown and crisp (around 4-5 minutes).
- Transfer cooked waffles to the prepared wire rack in the oven to keep warm while you cook the rest.
- Serve immediately with your favorite toppings.
