Ingredients:

  • 2 cups (260g) whole wheat flour (spooned & leveled)
  • 1 Tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 Tablespoons (85g) unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 2 Tablespoons (25g) packed light or dark brown sugar
  • 1 and 3/4 cup (420ml) buttermilk
  • 1 teaspoon pure vanilla extract

Instructions:

  1. Preheat waffle maker to medium-high. Preheat oven to 200°F (93°C). Place wire rack on a baking sheet; set aside.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In another large bowl, whisk the melted butter, eggs, and brown sugar. Then whisk in the buttermilk and vanilla until combined.
  4. Pour the wet ingredients into the dry ingredients. Gently whisk until just combined. Small lumps are okay!
  5. Grease the preheated waffle maker. Pour about 1/3 cup of batter (or amount specified by your waffle maker) into each well. Close the lid and cook according to waffle maker instructions, until golden brown and crisp (around 4-5 minutes).
  6. Transfer cooked waffles to the prepared wire rack in the oven to keep warm while you cook the rest.
  7. Serve immediately with your favorite toppings.
