Ingredients:
- 2 (6-ounce/170g) salmon fillets, skin on or off, about 1-inch thick
- 2 tablespoons (30ml) olive oil
- 1 tablespoon (15ml) lemon juice, freshly squeezed
- 1 clove garlic, minced
- 1 teaspoon (5ml) dried dill or 1 tablespoon (15ml) fresh dill, chopped
- 1/2 teaspoon (2.5ml) salt
- 1/4 teaspoon (1.25ml) black pepper, freshly ground
Instructions:
- Position oven rack 6-8 inches below the broiler and preheat.
- In a small bowl, combine olive oil, lemon juice, minced garlic, dill, salt, and pepper. Whisk to combine.
- Place salmon fillets on the broiler pan or foil-lined baking sheet. Brush the marinade evenly over the top of the fillets.
- Broil for 8-12 minutes, or until the salmon is cooked through and flakes easily with a fork. Watch carefully to prevent burning. (The internal temperature should reach 145°F/63°C).
- Let the salmon rest for a minute or two before serving.
