Ingredients:

  • 2 (6-ounce/170g) salmon fillets, skin on or off, about 1-inch thick
  • 2 tablespoons (30ml) olive oil
  • 1 tablespoon (15ml) lemon juice, freshly squeezed
  • 1 clove garlic, minced
  • 1 teaspoon (5ml) dried dill or 1 tablespoon (15ml) fresh dill, chopped
  • 1/2 teaspoon (2.5ml) salt
  • 1/4 teaspoon (1.25ml) black pepper, freshly ground

Instructions:

  1. Position oven rack 6-8 inches below the broiler and preheat.
  2. In a small bowl, combine olive oil, lemon juice, minced garlic, dill, salt, and pepper. Whisk to combine.
  3. Place salmon fillets on the broiler pan or foil-lined baking sheet. Brush the marinade evenly over the top of the fillets.
  4. Broil for 8-12 minutes, or until the salmon is cooked through and flakes easily with a fork. Watch carefully to prevent burning. (The internal temperature should reach 145°F/63°C).
  5. Let the salmon rest for a minute or two before serving.
