Ingredients:

  • 2 medium (1 lb / 450g) zucchini, sliced into ¾ inch (2cm) rounds or planks
  • 1 tbsp (15ml) extra virgin olive oil
  • ½ tsp (3g) garlic powder
  • ½ tsp (3g) kosher salt
  • ¼ tsp (1g) cracked black pepper
  • 1 tsp (5ml) fresh lemon juice
  • 1 tsp (1g) fresh parsley, chopped

Instructions:

  1. Preheat your outdoor grill or indoor grill pan to high heat (approximately 400°F / 200°C).
  2. In a large bowl, toss the zucchini slices with olive oil, garlic powder, salt, and pepper until lightly coated.
  3. Place zucchini slices on the hot grates, pressing down slightly with tongs. Grill for 3 to 4 minutes without moving them to create deep char marks.
  4. Flip the slices and grill for another 3 minutes until tender but still holding their shape.
  5. Remove from heat immediately and drizzle with fresh lemon juice and a sprinkle of parsley.
