Ingredients:
- 2 medium (1 lb / 450g) zucchini, sliced into ¾ inch (2cm) rounds or planks
- 1 tbsp (15ml) extra virgin olive oil
- ½ tsp (3g) garlic powder
- ½ tsp (3g) kosher salt
- ¼ tsp (1g) cracked black pepper
- 1 tsp (5ml) fresh lemon juice
- 1 tsp (1g) fresh parsley, chopped
Instructions:
- Preheat your outdoor grill or indoor grill pan to high heat (approximately 400°F / 200°C).
- In a large bowl, toss the zucchini slices with olive oil, garlic powder, salt, and pepper until lightly coated.
- Place zucchini slices on the hot grates, pressing down slightly with tongs. Grill for 3 to 4 minutes without moving them to create deep char marks.
- Flip the slices and grill for another 3 minutes until tender but still holding their shape.
- Remove from heat immediately and drizzle with fresh lemon juice and a sprinkle of parsley.
