Ingredients:
- 4 (6-ounce / 170g) salmon fillets, skin on or off
- 2 tablespoons olive oil (30ml)
- 1 medium lemon, zested and juiced
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs, chopped (such as dill, parsley, and thyme)
- 1/2 teaspoon salt (2.5ml)
- 1/4 teaspoon black pepper (1.25ml)
Instructions:
- Pat the salmon fillets dry with paper towels.
- In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, chopped herbs, salt, and pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper (if using). Pour the marinade evenly over the salmon, ensuring each fillet is well coated.
- Bake in a preheated oven at 400°F (200°C / Gas Mark 6) for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Look for the flesh to turn opaque. Internal temperature should reach 145°F (63°C).
- Carefully remove the salmon from the oven and serve immediately.
