Ingredients:

  • 1.5 lbs (680g) Salmon fillet, skin on or off
  • 2 tbsp (30ml) Olive oil, extra virgin
  • 1 Lemon, thinly sliced
  • 2 cloves Garlic, minced
  • 2 tbsp Fresh herbs, chopped (dill, parsley, thyme)
  • Salt and black pepper to taste
  • 1 tbsp (15g) Butter, cut into small pats (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or aluminum foil.
  3. Pat the salmon fillet dry with paper towels. Place the salmon on the prepared baking sheet.
  4. In a small bowl, combine olive oil, minced garlic, chopped herbs, salt, and pepper.
  5. Spread or drizzle the olive oil mixture evenly over the salmon fillet.
  6. Arrange lemon slices evenly over the top of the salmon.
  7. Dot the salmon with small pats of butter for extra richness (optional).
  8. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  9. Let the salmon rest for a few minutes before serving (optional).
  10. Serve immediately.
