Ingredients:

  • 4 large Italian sausage links (about 1 lb or 450g, sweet or spicy as preferred)
  • 2 tablespoons olive oil (30ml)
  • 1 large onion, sliced (about 200g)
  • 1 red bell pepper, sliced (about 150g)
  • 1 yellow bell pepper, sliced (about 150g)
  • 1 green bell pepper, sliced (about 150g)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano (2g)
  • 1/2 teaspoon red pepper flakes (optional, 1g)
  • Salt and black pepper to taste
  • Fresh basil or parsley, for garnish (optional)

Instructions:

  1. Slice onions and bell peppers. Mince garlic.
  2. Heat olive oil in a large skillet over medium heat. Add sausages and cook until browned on all sides (about 8-10 minutes). Use tongs to turn.
  3. Remove the sausages from the skillet and set aside. In the same skillet, add sliced onions and cook until translucent (about 5 minutes). Stir in bell peppers and garlic; sauté until tender (around 5-7 minutes).
  4. Return sausages to the skillet. Add oregano, red pepper flakes (if using), salt, and black pepper. Stir well to combine; cook for an additional 5-10 minutes until sausages are cooked through (internal temperature reaches 165°F or 74°C).
  5. Garnish with fresh basil or parsley, if desired. Serve hot.
