Ingredients:

  • 1 pound (450g) fresh green beans, trimmed
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • 1/4 cup (25g) slivered almonds
  • 2 tablespoons (30ml) lemon juice, freshly squeezed
  • 1 tablespoon (15ml) water
  • 1/4 teaspoon (1.5g) red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Wash and trim the green beans. Ensure they are dried thoroughly.
  2. Toast slivered almonds in a dry pan over medium heat until lightly golden and fragrant, about 2-3 minutes. Watch them carefully, they burn easily! Set aside.
  3. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Be careful not to burn the garlic.
  4. Add the green beans to the skillet. Sauté, stirring frequently, until they are bright green and crisp-tender, about 6-8 minutes.
  5. Add the lemon juice and water to the skillet and scrape up any browned bits from the bottom of the pan.
  6. Season with salt, pepper, and red pepper flakes (if using). Toss to combine.
  7. Sprinkle with toasted almonds (if using) and serve immediately.
