Ingredients:
- 3 lbs Sweet Potatoes (about 5-6 medium), peeled and cubed
- ½ cup Unsalted Butter, melted (115 g)
- ½ cup Granulated Sugar (100 g)
- ½ cup Packed Light Brown Sugar (110 g)
- ¼ cup Heavy Cream (60 ml)
- 2 large Eggs, lightly whisked
- 1 tbsp Pure Vanilla Extract (15 ml)
- 1 tsp Ground Cinnamon (5 g)
- ½ tsp Ground Nutmeg (2.5 g)
- ½ tsp Salt (fine sea salt, 2.5 g)
- For the Streusel Topping:
- ½ cup All-Purpose Flour (60 g)
- ½ cup Packed Light Brown Sugar (110 g)
- ⅓ cup Unsalted Butter, chilled and cubed (75 g)
- 1 cup Pecan Halves, roughly chopped (100 g)
- ¼ tsp Ground Cinnamon (1 g)
Instructions:
- Prepare and mash the sweet potatoes: Peel and cube the sweet potatoes. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until fork-tender (15-20 minutes). Drain the potatoes thoroughly and allow them to steam-dry for a few minutes. Transfer the hot potatoes to a mixing bowl and mash until completely smooth.
- Create the casserole base: Preheat the slow cooker (6-quart or larger) and grease the insert well. Add the melted butter, granulated sugar, brown sugar, heavy cream, whisked eggs, vanilla extract, cinnamon, nutmeg, and salt to the mashed potatoes. Mix thoroughly until the mixture is homogenous and smooth. Scrape the mixture into the prepared slow cooker insert and spread evenly.
- Slow cook the casserole: Place a layer of paper towels or a clean tea towel directly over the top of the slow cooker insert to absorb condensation, then place the lid firmly over the towel. Cook on LOW for 3.5 to 4 hours, or on HIGH for 1.5 to 2 hours. The casserole is ready when the edges are set and the centre is mostly firm.
- Prepare and add the streusel topping: While the casserole cooks (about 30 minutes before it's done), prepare the streusel. In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Stir in the chopped pecans. Remove the lid and the damp towel from the slow cooker. Sprinkle the streusel topping evenly over the surface of the Slow Cooker Sweet Potato Casserole.
- Finish and serve: Replace the lid (without the towel) and cook for the final 20–30 minutes until the streusel is soft but incorporated, and the casserole is fully set. Turn the slow cooker to the 'Keep Warm' setting until ready to serve.
