Ingredients:

  • 2 medium English Cucumbers (Approx. 600g)
  • 1 teaspoon Fine Sea Salt
  • 8 oz block Full-Fat Cream Cheese, softened to room temperature
  • 2 tablespoons Sour Cream
  • 1 tablespoon Fresh Dill, finely chopped
  • 1 tablespoon Fresh Chives, thinly sliced
  • 1/2 teaspoon Lemon Zest
  • 1/2 teaspoon Black Pepper, freshly ground
  • 4 oz Smoked Salmon, high-quality, thinly sliced
  • 2 teaspoons Everything Bagel Seasoning
  • 1 teaspoon Extra Chives, for visual garnish

Instructions:

  1. Slice the two washed and dried cucumbers into discs approximately 1/2 inch (1.25 cm) thick. Aim for uniform slices.
  2. Lay the cucumber slices flat on a layer of paper towels and sprinkle evenly with 1 teaspoon of sea salt. Let rest for 10 minutes to draw out moisture. Pat the slices aggressively dry with fresh paper towels. This crucial step prevents a soggy base.
  3. In a mixing bowl, combine the room-temperature cream cheese and sour cream. Mix using a spatula or hand mixer until completely smooth and lump-free.
  4. Gently fold in the fresh dill, chives, lemon zest, and black pepper. Taste the mixture and adjust seasoning if needed. If the filling is very soft, cover and chill for 5–10 minutes.
  5. Cut the smoked salmon into small, manageable strips or ribbons (approx. 1-inch pieces).
  6. Transfer the filling to a piping bag fitted with a star tip (or use two small spoons). Pipe a generous dollop of filling onto the center of each dried cucumber slice.
  7. Gently place one ribbon of smoked salmon atop the cream cheese filling on each bite.
  8. Sprinkle the assembled bites lightly with Everything Bagel seasoning and the remaining sliced chives.
  9. Transfer the finished Keto Cucumber Bites to a platter and chill for 15 minutes before serving.
