Ingredients:
- 1.5 cups (150g) graham cracker crumbs
- 3 tbsp (42g) unsalted butter, melted
- 2 tbsp (25g) brown sugar
- 1/4 tsp (1.5g) salt
- 16 oz (450g) cream cheese, softened to room temperature
- 1/2 cup (100g) granulated sugar
- 1/3 cup (110g) marshmallow fluff
- 2 large (100g) eggs, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1/2 tsp (2.5ml) lemon juice
- 4 oz (115g) dark chocolate (60% cacao or higher), chopped
- 1/3 cup (80ml) heavy cream
- 1 cup (30g) mini marshmallows
Instructions:
- Preheat oven to 325°F (160°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang.
- Combine graham cracker crumbs, melted butter, brown sugar, and salt. Press firmly into the bottom of the pan.
- Bake the crust for 8–10 minutes until fragrant and golden; remove and cool.
- Beat softened cream cheese and granulated sugar on medium speed until smooth.
- Fold in marshmallow fluff, vanilla extract, and lemon juice until fully incorporated.
- Add eggs one at a time, mixing on low speed just until the yellow streaks disappear.
- Pour the filling over the par-baked crust and smooth the top with a spatula.
- Bake for 35–40 minutes until edges are set but the center still has a slight jiggle.
- Cool completely at room temperature, then refrigerate for at least 4 hours.
- Prepare chocolate ganache by combining chopped dark chocolate and heavy cream, heating until smooth.
- Pour ganache over the chilled cheesecake, top with mini marshmallows, and toast briefly if desired.
