Ingredients:

  • 4 cups (500g) all-purpose flour, plus more for dusting
  • 1 teaspoon (6g) baking soda
  • 1 teaspoon (6g) salt
  • 1 ¾ cups (420ml) buttermilk
  • 2 tablespoons (30ml) milk or beaten egg, for brushing

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
  2. In a large bowl, whisk together flour, baking soda, and salt until well combined.
  3. Make a well in the center of the dry ingredients and pour in the buttermilk.
  4. Gently mix until just combined. Be careful not to overmix. The dough will be shaggy and sticky.
  5. Turn the dough out onto a lightly floured surface. Gently form it into a round loaf, about 6-7 inches in diameter.
  6. Place the loaf on the prepared baking sheet. Using a sharp knife or dough scraper, cut a deep cross into the top of the loaf (about 1 inch deep).
  7. Brush the top of the loaf with milk or beaten egg for a golden-brown crust.
  8. Bake for 30-35 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.
  9. Let the bread cool on a wire rack before slicing and serving.
