Ingredients:
- 4 cups (500g) all-purpose flour, plus more for dusting
- 1 teaspoon (6g) baking soda
- 1 teaspoon (6g) salt
- 1 ¾ cups (420ml) buttermilk
- 2 tablespoons (30ml) milk or beaten egg, for brushing
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
- In a large bowl, whisk together flour, baking soda, and salt until well combined.
- Make a well in the center of the dry ingredients and pour in the buttermilk.
- Gently mix until just combined. Be careful not to overmix. The dough will be shaggy and sticky.
- Turn the dough out onto a lightly floured surface. Gently form it into a round loaf, about 6-7 inches in diameter.
- Place the loaf on the prepared baking sheet. Using a sharp knife or dough scraper, cut a deep cross into the top of the loaf (about 1 inch deep).
- Brush the top of the loaf with milk or beaten egg for a golden-brown crust.
- Bake for 30-35 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.
- Let the bread cool on a wire rack before slicing and serving.
