Ingredients:

  • 1 cup (250g) creamy peanut butter (not natural)
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon (5g) baking soda
  • 1/4 teaspoon (1g) salt
  • 1 ¼ cups (150g) all-purpose flour
  • 1 cup (150g) M&M candies (plus extra for topping if desired)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine peanut butter, granulated sugar, and brown sugar. Mix until smooth.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the peanut butter mixture, stirring until just combined.
  5. Fold in the M&M candies gently until evenly distributed.
  6. Chill the dough in the refrigerator for about 30 minutes to firm up.
  7. Scoop tablespoons of dough onto a baking sheet lined with parchment, spacing them apart.
  8. Press a few extra M&Ms on top of each cookie if desired.
  9. Bake in the preheated oven for 10-12 minutes or until edges are lightly golden but centers are still soft.
  10. Cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
