Ingredients:
- 3 ripe bananas (approximately 1 ½ cups mashed, or 450g)
- ½ cup (100g) granulated sugar
- ¼ cup (50g) packed brown sugar
- 1 large egg (50g)
- 1/3 cup (80ml) unsalted butter, melted
- 1 teaspoon (5ml) vanilla extract
- 1 teaspoon (5g) baking soda
- ½ teaspoon (2g) baking powder
- ¼ teaspoon (1g) salt
- 1 teaspoon (2g) ground cinnamon
- 1 ½ cups (190g) all-purpose flour
Instructions:
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it well.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Stir in the granulated sugar, brown sugar, egg, melted butter, and vanilla until well combined.
- In another bowl, whisk together the baking soda, baking powder, salt, cinnamon, and flour.
- Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined; do not overmix.
- Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
