Ingredients:

  • 3 ripe bananas (approximately 1 ½ cups mashed, or 450g)
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) packed brown sugar
  • 1 large egg (50g)
  • 1/3 cup (80ml) unsalted butter, melted
  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon (5g) baking soda
  • ½ teaspoon (2g) baking powder
  • ¼ teaspoon (1g) salt
  • 1 teaspoon (2g) ground cinnamon
  • 1 ½ cups (190g) all-purpose flour

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it well.
  2. In a large bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the granulated sugar, brown sugar, egg, melted butter, and vanilla until well combined.
  4. In another bowl, whisk together the baking soda, baking powder, salt, cinnamon, and flour.
  5. Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined; do not overmix.
  6. Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
