Ingredients:

  • 1 lb smoked sausage, sliced (e.g., Andouille or kielbasa)
  • 1 cup long-grain rice, rinsed
  • 2 cups chicken broth
  • 1 can diced tomatoes (15 oz), drained
  • 1 cup chopped bell peppers
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • ½ cup shredded cheese (optional)
  • 2 tbsp fresh parsley, chopped (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and bell peppers; sauté until soft (about 5 minutes). Stir in minced garlic; cook for an additional minute.
  3. Add sliced sausage to the skillet; cook until browned (about 5-7 minutes).
  4. Transfer the sausage and vegetable mixture to a large bowl. Add rinsed rice, diced tomatoes, chicken broth, paprika, cayenne pepper, salt, and pepper; mix well.
  5. Pour the mixture into the greased baking dish, spreading it evenly.
  6. Cover with foil and bake for 25 minutes. Remove foil; bake for an additional 15 minutes or until rice is tender and liquid is absorbed.
  7. If using, sprinkle shredded cheese over the top and let it melt for 5 minutes before serving.
  8. Sprinkle with fresh parsley before serving.
