Instructions:
- Dice the Granny Smith apples into small, uniform 1/4-inch cubes and toss them in a small bowl with a pinch of cinnamon.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt until well combined and clump-free.
- Using an electric mixer, beat the softened unsalted butter and coconut sugar until the mixture is pale and fluffy.
- Add eggs one at a time, then stir in the vanilla extract and Greek yogurt, beating on medium speed until the batter is smooth.
- Gently fold the dry ingredients into the wet mixture using a spatula until just combined; do not overmix.
- Fold in the diced apples and pour the batter into a greased 10-inch Bundt pan.
- Bake for 65 minutes or until a toothpick inserted into the center comes out clean.
- Prepare the caramel drizzle by melting salted butter and coconut sugar, then stirring in heavy cream and vanilla.
- Prepare the frosting by blending softened low-fat cream cheese and maple syrup until smooth.
