Ingredients:
- 2 ¼ cups (280g) all-purpose flour
- 1 ½ tsp (7g) baking soda
- ½ tsp (3g) salt
- 2 tsp (5g) ground cinnamon
- ½ tsp (1g) ground nutmeg
- ½ tsp (1g) ground ginger
- ¾ cup (170g) unsalted butter, browned and cooled
- 1 cup (200g) dark brown sugar, packed
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- ½ cup (120ml) sour cream
- 2 cups (300g) Granny Smith apples, peeled and finely diced
- ½ cup (115g) unsalted butter
- 1 cup (200g) dark brown sugar, packed
- ½ cup (120ml) heavy cream
- 2 tbsp (30ml) apple cider
- ½ tsp (3g) sea salt
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 10-12 cup Bundt pan with butter and flour.
- Toss diced apples with a pinch of cinnamon.
- Sift together flour, baking soda, salt, cinnamon, nutmeg, and ginger in a bowl.
- Beat browned butter and dark brown sugar until the mixture resembles wet sand.
- Add eggs one at a time, then mix in vanilla and sour cream until smooth.
- Gradually stir in the dry ingredients until just combined, then fold in the diced apples by hand.
- Pour batter into the prepared pan and bake for 55-65 minutes.
- Prepare the caramel sauce by melting butter and brown sugar in a saucepan, slowly incorporating heavy cream, apple cider, sea salt, and vanilla extract until glossy.
- Glaze the cooled cake with the apple caramel sauce before serving.
