Ingredients:

  • 2 ¼ cups (280g) all-purpose flour
  • 1 ½ tsp (7g) baking soda
  • ½ tsp (3g) salt
  • 2 tsp (5g) ground cinnamon
  • ½ tsp (1g) ground nutmeg
  • ½ tsp (1g) ground ginger
  • ¾ cup (170g) unsalted butter, browned and cooled
  • 1 cup (200g) dark brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • ½ cup (120ml) sour cream
  • 2 cups (300g) Granny Smith apples, peeled and finely diced
  • ½ cup (115g) unsalted butter
  • 1 cup (200g) dark brown sugar, packed
  • ½ cup (120ml) heavy cream
  • 2 tbsp (30ml) apple cider
  • ½ tsp (3g) sea salt
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 10-12 cup Bundt pan with butter and flour.
  2. Toss diced apples with a pinch of cinnamon.
  3. Sift together flour, baking soda, salt, cinnamon, nutmeg, and ginger in a bowl.
  4. Beat browned butter and dark brown sugar until the mixture resembles wet sand.
  5. Add eggs one at a time, then mix in vanilla and sour cream until smooth.
  6. Gradually stir in the dry ingredients until just combined, then fold in the diced apples by hand.
  7. Pour batter into the prepared pan and bake for 55-65 minutes.
  8. Prepare the caramel sauce by melting butter and brown sugar in a saucepan, slowly incorporating heavy cream, apple cider, sea salt, and vanilla extract until glossy.
  9. Glaze the cooled cake with the apple caramel sauce before serving.
