Ingredients:
- 1 medium apple, grated (about 1 cup)
- 1 large egg
- 1/4 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups rolled oats (not instant)
- 1/2 cup whole wheat flour (or all-purpose)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup chopped walnuts
- 1/4 cup raisins (or dried cranberries)
- 2 tablespoons maple syrup (optional)
Instructions:
- Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
- In a large bowl, combine grated apple, egg, applesauce, melted coconut oil, and vanilla extract. Whisk until well combined.
- In the same bowl, add rolled oats, flour, baking soda, salt, cinnamon, and nutmeg. Stir until just combined – do not overmix.
- Gently fold in chopped walnuts and raisins (or cranberries). If using maple syrup, stir it in now.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
- Bake for 12-15 minutes, or until the edges are golden brown and the centers are set.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
