Ingredients:

  • 1 medium apple, grated (about 1 cup)
  • 1 large egg
  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats (not instant)
  • 1/2 cup whole wheat flour (or all-purpose)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts
  • 1/4 cup raisins (or dried cranberries)
  • 2 tablespoons maple syrup (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  2. In a large bowl, combine grated apple, egg, applesauce, melted coconut oil, and vanilla extract. Whisk until well combined.
  3. In the same bowl, add rolled oats, flour, baking soda, salt, cinnamon, and nutmeg. Stir until just combined – do not overmix.
  4. Gently fold in chopped walnuts and raisins (or cranberries). If using maple syrup, stir it in now.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
  6. Bake for 12-15 minutes, or until the edges are golden brown and the centers are set.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
