Ingredients:

  • 1 ½ cups (190g) whole wheat flour
  • ½ cup (60g) all-purpose flour (optional)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ½ tsp salt
  • 1 ½ cups (340g) pumpkin puree
  • ½ cup (120ml) unsweetened applesauce
  • ½ cup (120ml) maple syrup
  • ¼ cup (60ml) melted coconut oil
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup chocolate chips (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, whisk together whole wheat flour, all-purpose flour (if using), baking soda, baking powder, spices, and salt.
  3. In a separate medium bowl, combine pumpkin puree, applesauce, maple syrup, melted coconut oil, eggs, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Gently fold in chopped nuts and/or chocolate chips, if using.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
