Ingredients:
- 1 ½ cups (190g) whole wheat flour
- ½ cup (60g) all-purpose flour (optional)
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- ½ tsp salt
- 1 ½ cups (340g) pumpkin puree
- ½ cup (120ml) unsweetened applesauce
- ½ cup (120ml) maple syrup
- ¼ cup (60ml) melted coconut oil
- 2 large eggs, lightly beaten
- 1 tsp vanilla extract
- ½ cup chopped walnuts or pecans (optional)
- ½ cup chocolate chips (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together whole wheat flour, all-purpose flour (if using), baking soda, baking powder, spices, and salt.
- In a separate medium bowl, combine pumpkin puree, applesauce, maple syrup, melted coconut oil, eggs, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Gently fold in chopped nuts and/or chocolate chips, if using.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
