Ingredients:
- 1 lb (450 g) ground beef or turkey
- 1 packet (1 oz or 28 g) taco seasoning
- 1 can (15 oz or 425 g) black beans, drained and rinsed
- 1 cup (150 g) corn (frozen or canned)
- 1 cup (150 g) diced tomatoes (canned or fresh)
- 1 cup (100 g) shredded cheddar cheese
- ½ cup (120 ml) sour cream
- 1 cup (240 ml) beef broth or water
- 28 oz (794 g) frozen tater tots
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large skillet, brown the ground beef over medium heat until cooked through. Drain excess fat.
- Add taco seasoning, black beans, corn, diced tomatoes, and beef broth; stir to combine. Simmer for 5-7 minutes.
- Remove from heat and mix in half of the shredded cheddar cheese and the sour cream until well incorporated.
- Pour the mixture into a 9x13-inch baking dish, spreading it evenly.
- Arrange the frozen tater tots in a single layer over the filling.
- Place in the oven and bake for 25-30 minutes, or until the tater tots are golden brown.
- Sprinkle remaining cheddar cheese over the top, return to oven for an additional 5 minutes until melted.
- Let cool for about 5 minutes, then serve warm.
