Ingredients:
- 2 cups fresh strawberries, hulled and halved (400g)
- 2 cups green grapes, halved (300g)
- 2 cups fresh pineapple, peeled, cored, and cubed (300g)
- 1 cup blueberries (150g)
- 1 cup kiwi fruit, peeled and diced (175g)
- 1 cup mandarin oranges, peeled and segmented (about 3 medium mandarins, 150g)
- 1/2 cup fresh raspberries (75g) (optional)
- 1/4 cup fresh lemon juice (60ml, from about 2 lemons)
- 2 tablespoons honey or agave nectar (30ml)
- 1 tablespoon finely chopped fresh mint (15ml)
- 1 teaspoon lemon zest (5ml)
- 1/4 teaspoon salt (1g)
- Pinch of freshly ground black pepper (optional)
Instructions:
- Wash and thoroughly dry all fruit. Chop the strawberries, grapes, pineapple, and kiwi into bite-sized pieces. Peel and segment the mandarin oranges.
- In a small bowl, whisk together the lemon juice, honey (or agave), chopped mint, lemon zest, salt, and pepper (if using) until well combined.
- Gently combine all the chopped fruit in the large mixing bowl. Pour the lemon-mint dressing over the fruit and gently toss to coat.
- Cover the fruit salad and refrigerate for at least 30 minutes to allow the flavors to meld.
