Ingredients:
- 1 lb (450g) Sirloin or Ribeye steak, about 1 inch thick
- 1 tbsp (15ml) Soy sauce
- 1 tbsp (15ml) Vegetable oil
- 1 tsp (5ml) Cornstarch
- 1/2 tsp (2.5ml) Ground black pepper
- 1 clove garlic, minced (optional, for marinade)
- 2 tbsp (30ml) Vegetable oil, divided
- 1 medium onion, diced (approx. 1 cup / 150g)
- 2 carrots, diced (approx. 1 cup / 150g)
- 2 cups (200g) Frozen peas
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 4 cups (approx. 600g) Cooked and chilled long-grain rice (day-old is best)
- 3 tbsp (45ml) Soy sauce
- 1 tbsp (15ml) Oyster sauce (or Hoisin sauce for vegetarian option)
- 1 tbsp (15ml) Sesame oil
- 1 tbsp (15ml) Brown sugar
- 1 tsp (5ml) Rice vinegar
- 1/2 tsp (2.5ml) Ground ginger
- Chopped green onions (scallions, optional, for garnish)
- Sesame seeds (optional, for garnish)
Instructions:
- Marinate the Steak (Optional): Combine steak with soy sauce, vegetable oil, cornstarch, black pepper, and minced garlic (if using). Let sit for at least 30 minutes in the fridge.
- Cook the Steak: Heat a wok or skillet over high heat. Sear the steak for about 3-4 minutes per side for medium-rare, adjusting time based on desired doneness. Let rest for 5 minutes before slicing thinly against the grain.
- Prep the Veggies: Dice onion and carrots. Measure out frozen peas. Mince garlic.
- Cook the Veggies: Heat 1 tbsp of oil in the wok. Sauté onion and carrots until softened (about 5 minutes). Add garlic and cook for another minute. Stir in the frozen peas.
- Scramble the Eggs: Move the vegetables to one side of the wok. Add the remaining 1 tbsp of oil and pour in the beaten eggs. Scramble until cooked through.
- Add the Rice: Add the chilled rice to the wok. Break it up with a spatula and toss to combine with the vegetables and eggs.
- Add the Sauce and Steak: Pour the sauce (soy sauce, oyster sauce, sesame oil, brown sugar, rice vinegar, ginger) over the rice and toss to coat evenly. Add the sliced steak and toss gently to incorporate, creating delicious steak fried rice.
- Serve: Garnish with green onions and sesame seeds, if desired. Serve immediately.
