Ingredients:
- 8 cups popped popcorn
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/4 cup unsalted butter
- 1/4 cup corn syrup
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt (optional, for garnish)
Instructions:
- Pop the popcorn using your preferred method and transfer to a large mixing bowl. Sprinkle with salt.
- In a medium saucepan, combine sugar, butter, and corn syrup. Heat over medium heat, stirring constantly until bubbling and light amber (about 5-7 minutes). Remove from heat and whisk in peanut butter and vanilla until smooth.
- Pour the caramel mixture over the popcorn, folding gently until evenly coated.
- Spread the popcorn mixture onto a line baking sheet, pressing down to form an even layer. Optionally sprinkle sea salt. Refrigerate for 30 minutes to set.
- Once set, remove from refrigerator and cut into squares or break into bite-sized pieces. Serve and enjoy!
