Ingredients:

  • 8 cups popped popcorn
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/4 cup corn syrup
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt (optional, for garnish)

Instructions:

  1. Pop the popcorn using your preferred method and transfer to a large mixing bowl. Sprinkle with salt.
  2. In a medium saucepan, combine sugar, butter, and corn syrup. Heat over medium heat, stirring constantly until bubbling and light amber (about 5-7 minutes). Remove from heat and whisk in peanut butter and vanilla until smooth.
  3. Pour the caramel mixture over the popcorn, folding gently until evenly coated.
  4. Spread the popcorn mixture onto a line baking sheet, pressing down to form an even layer. Optionally sprinkle sea salt. Refrigerate for 30 minutes to set.
  5. Once set, remove from refrigerator and cut into squares or break into bite-sized pieces. Serve and enjoy!
