Ingredients:
- 3/4 cup medium-grain white rice
- 1 1/2 cups water
- 1/4 tsp sea salt
- 4 cups 2% milk
- 1/3 cup sweetened condensed milk
- 1 tsp pure vanilla extract
- 1/2 tsp ground cinnamon
- 1 piece orange peel
Instructions:
- Rinse the medium-grain rice in a fine mesh sieve until the water runs clear to remove excess surface starch.
- In a heavy-bottomed saucepan, combine the rice, water, and sea salt. Bring to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for 15 minutes or until the water is mostly absorbed and the rice is par-boiled.
- Stir in the 2% milk and the 1 piece orange peel.
- Cook uncovered over medium-low heat for 20 minutes, stirring frequently until the mixture starts to thicken.
- Pour in 1/3 cup sweetened condensed milk.
- Continue to simmer for another 5 to 10 minutes until the pudding coats the back of a spoon.
- Remove from heat and stir in 1 tsp pure vanilla extract and 1/2 tsp ground cinnamon.
- Let the pudding rest for 5 minutes before serving until it reaches a luscious consistency.
