Ingredients:
- 1 cup unsweetened coconut milk
- 1/2 cup fresh strawberries
- 1 tbsp maple syrup
- 1 tsp lemon juice
- 1/4 tsp ground cinnamon
- 1/4 cup chia seeds
- 1/2 cup plain non-fat Greek yogurt
- 1/2 tsp vanilla extract
- 1/2 cup sliced fresh strawberries
- 1 tbsp sliced almonds
Instructions:
- Combine the coconut milk, 1/2 cup strawberries, maple syrup, lemon juice, and cinnamon in a blender. Process until the mixture is a smooth, pale pink liquid.
- In a medium bowl, whisk together the blended strawberry milk, Greek yogurt, and vanilla extract until velvety. Slowly stir in the chia seeds.
- Let the mixture sit for 10 minutes, then stir vigorously a second time to eliminate any seed clusters.
- Divide the mixture evenly among four 8 oz mason jars. Seal with lids and refrigerate for at least 4 hours or overnight.
- Before serving, top each jar with sliced fresh strawberries and sliced almonds.
