Ingredients:

  • 1 cup unsweetened coconut milk
  • 1/2 cup fresh strawberries
  • 1 tbsp maple syrup
  • 1 tsp lemon juice
  • 1/4 tsp ground cinnamon
  • 1/4 cup chia seeds
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 tsp vanilla extract
  • 1/2 cup sliced fresh strawberries
  • 1 tbsp sliced almonds

Instructions:

  1. Combine the coconut milk, 1/2 cup strawberries, maple syrup, lemon juice, and cinnamon in a blender. Process until the mixture is a smooth, pale pink liquid.
  2. In a medium bowl, whisk together the blended strawberry milk, Greek yogurt, and vanilla extract until velvety. Slowly stir in the chia seeds.
  3. Let the mixture sit for 10 minutes, then stir vigorously a second time to eliminate any seed clusters.
  4. Divide the mixture evenly among four 8 oz mason jars. Seal with lids and refrigerate for at least 4 hours or overnight.
  5. Before serving, top each jar with sliced fresh strawberries and sliced almonds.
