Ingredients:

  • 4 cups (480g) powdered sugar, sifted
  • 6 tablespoons (90ml) whole milk
  • 1 tablespoon (15ml) light corn syrup
  • 1 teaspoon (5ml) clear vanilla extract
  • 1/4 teaspoon (1.25ml) almond extract
  • 1 pinch fine sea salt

Instructions:

  1. Sift the powdered sugar into a large glass bowl to ensure a smooth, bump-free finish and prevent clogged piping tips.
  2. Add the milk, light corn syrup, vanilla extract, almond extract, and salt to the bowl.
  3. Whisk slowly by hand using a whisk or silicone spatula. Avoid using a stand mixer to prevent incorporating excess air bubbles that cause pockmarks.
  4. Test for '10-second consistency' by drizzling icing back into the bowl; the trail should disappear in exactly 10 seconds. Adjust with more sugar to thicken or more milk to thin.
  5. Transfer the icing to squeeze bottles or piping bags equipped with small round tips for decorating.
