Ingredients:

  • 3 large overripe bananas (heavily spotted)
  • 0.5 cup unsweetened applesauce
  • 2 large eggs (room temperature)
  • 0.33 cup melted coconut oil
  • 1 tsp pure vanilla extract
  • 1.5 cups whole wheat pastry flour
  • 1 tsp baking soda
  • 0.5 tsp sea salt
  • 1.5 tsp ground cinnamon
  • 0.5 cup chopped walnuts (optional)
  • 2 tbsp sugar-free dark chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, use a potato masher to mash the 3 large overripe bananas until mostly smooth with only small chunks remaining.
  3. Whisk in the 0.5 cup unsweetened applesauce, 2 large eggs, 0.33 cup melted coconut oil, and 1 tsp vanilla extract until thoroughly emulsified.
  4. Gently fold in the 1.5 cups flour, 1 tsp baking soda, 0.5 tsp sea salt, and 1.5 tsp cinnamon using a silicone spatula. Mix until just combined; do not overmix.
  5. If using texture boosters, fold in the walnuts or sugar-free chocolate chips.
  6. Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
