Ingredients:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder

- 2 large eggs
- 1/2 cup whole milk
- 2 tablespoons unsalted butter, melted

- 2 medium apples, peeled, cored, and diced
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions:
- In a bowl, combine diced apples, brown sugar, cinnamon, and lemon juice. Toss until apples are well coated and set aside.
- In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. In a separate bowl, combine eggs, milk, melted butter, and vanilla.
- Create a well in the dry ingredients and pour in the wet mixture. Stir until just combined; the dough should be sticky yet manageable. Cover and chill in the refrigerator for 30 minutes.
- On a floured surface, roll out the chilled dough to 1/4-inch thickness. Cut into squares or circles using a cutter or knife.
- Place a small spoonful of apple filling in the center of each dough piece. Fold and seal to encase the filling, ensuring edges are pinched well.
- In a deep pot, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
- Carefully drop filled dough pieces into the hot oil a few at a time. Fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove and place on paper towels to drain excess oil.
- Dust the warm beignets with powdered sugar and serve immediately.
