Ingredients:

  • 2-3 lbs spare ribs (900-1350g)
  • 1 tablespoon kosher salt (15g)
  • 1 teaspoon black pepper (5g)
  • 1 tablespoon garlic powder (8g)
  • 1 tablespoon onion powder (8g)
  • 1 cup barbecue sauce (240ml)
  • 1/4 cup apple cider vinegar (60ml)
  • 1 tablespoon honey (15ml)
  • 1 teaspoon smoked paprika (5g)
  • optional: pinch of cayenne pepper for heat

Instructions:

  1. Remove the membrane from the back of the ribs and pat dry. Season liberally with salt, pepper, garlic powder, and onion powder.
  2. In a bowl, mix barbecue sauce, apple cider vinegar, honey, smoked paprika, and cayenne pepper, if using.
  3. Select the sauté function on the Instant Pot. Add a splash of water and sear ribs on both sides for added flavor.
  4. Place seasoned ribs in the Instant Pot and pour sauce mixture over them, ensuring they are well coated. Seal the lid and set to high pressure for 30 minutes.
  5. Once cooking completes, allow the pressure to release naturally for 10-15 minutes before manually releasing any remaining pressure.
  6. Preheat the oven broiler. Remove ribs from the pot, place on a baking sheet, brush with additional sauce, and broil for 5-7 minutes until caramelized and sticky.
