Ingredients:

  • 1/4 cup (60ml) extra virgin olive oil
  • 3 tablespoons (45ml) red wine vinegar
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 tablespoon (15ml) water (optional, to thin the dressing)
  • 1 clove garlic, minced (or 1/2 teaspoon garlic powder)
  • 1 teaspoon dried oregano, crushed slightly between your fingers
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon sea salt, or to taste
  • 1/8 teaspoon black pepper, freshly ground, or to taste

Instructions:

  1. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, water (if using), minced garlic (or garlic powder), oregano, Dijon mustard, salt, and pepper.
  2. Whisk vigorously until the dressing is emulsified (well combined and slightly thickened). Alternatively, place all ingredients in a jar, seal the lid tightly, and shake vigorously until emulsified.
  3. Taste the dressing and adjust the seasoning as needed. Add more salt, pepper, lemon juice, or oregano to your liking.
  4. For best flavor, let the dressing sit for at least 30 minutes to allow the flavors to meld.
  5. Drizzle over your favorite Greek salad or other dishes. Shake or whisk again before serving, as the dressing may separate slightly.
