Ingredients:
- 1/4 cup (60ml) extra virgin olive oil
- 3 tablespoons (45ml) red wine vinegar
- 2 tablespoons (30ml) fresh lemon juice
- 1 tablespoon (15ml) water (optional, to thin the dressing)
- 1 clove garlic, minced (or 1/2 teaspoon garlic powder)
- 1 teaspoon dried oregano, crushed slightly between your fingers
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon sea salt, or to taste
- 1/8 teaspoon black pepper, freshly ground, or to taste
Instructions:
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, water (if using), minced garlic (or garlic powder), oregano, Dijon mustard, salt, and pepper.
- Whisk vigorously until the dressing is emulsified (well combined and slightly thickened). Alternatively, place all ingredients in a jar, seal the lid tightly, and shake vigorously until emulsified.
- Taste the dressing and adjust the seasoning as needed. Add more salt, pepper, lemon juice, or oregano to your liking.
- For best flavor, let the dressing sit for at least 30 minutes to allow the flavors to meld.
- Drizzle over your favorite Greek salad or other dishes. Shake or whisk again before serving, as the dressing may separate slightly.
