Ingredients:
- 2 cups (240g) all-purpose flour
- 1 teaspoon instant yeast
- 1 teaspoon salt
- 3/4 cup (180ml) warm water (about 110°F or 43°C)
- 1 tablespoon (15ml) olive oil (extra for greasing)
- 1/2 cup (120ml) marinara sauce (or pizza sauce)
- 1 cup (100g) shredded mozzarella cheese
- 1/2 cup (75g) sliced pepperoni (or any preferred toppings)
- 1 tablespoon (15ml) olive oil (for drizzling)
- Fresh basil leaves (optional, for garnish)
- Salt and cracked black pepper (to taste)
Instructions:
- Mix the Dough: In a large bowl, combine the all-purpose flour, instant yeast, and salt. Add the warm water and olive oil, and stir until a dough forms.
- Knead and Rest: Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth. Grease the bowl, place the dough back, and cover with plastic wrap or a kitchen towel. Let the dough rest for 30 minutes at room temperature.
- Shape the Focaccia Pizza: Preheat the oven to 425°F (220°C). Grease the baking sheet with olive oil. Punch down the dough and spread it onto the greased baking sheet, pressing it into a rectangle.
- Add the Toppings: Spread the marinara sauce evenly over the dough. Sprinkle mozzarella cheese on top, followed by your choice of toppings. Drizzle olive oil over the toppings, and season with salt and black pepper.
- Bake: Bake in the preheated oven for about 20 minutes, or until the edges are golden and the cheese is bubbly.
- Serve: Remove from the oven and let cool slightly. Garnish with fresh basil leaves if desired, slice, and enjoy!
