Ingredients:

  • 1 cup (240 ml) unsweetened almond milk
  • 1 cup (30g) packed fresh spinach
  • 1/2 cup (75g) frozen mango chunks
  • 1/4 medium avocado (approx. 35g)
  • 1 tablespoon (15ml) lime juice, freshly squeezed
  • 1 teaspoon (5ml) chia seeds
  • 1/2 inch (1.25cm) fresh ginger, peeled

Instructions:

  1. Roughly chop the spinach. Peel and roughly chop the ginger.
  2. Add the almond milk, spinach, mango, avocado, lime juice, chia seeds, and ginger to the blender.
  3. Blend on high speed until completely smooth. If the smoothie is too thick, add a splash more almond milk.
  4. Taste the smoothie and adjust sweetness or tanginess as desired. Add a squeeze more lime juice or a touch of honey or maple syrup (optional).
  5. Pour into a glass and enjoy immediately!
