Ingredients:

  • 2 slices of good quality bread (such as sourdough, country white, or brioche)
  • 2 tablespoons (30ml) unsalted butter, softened, divided
  • 2-3 slices (about 2 ounces/55g) of cheese (such as cheddar, Gruyere, Monterey Jack, or a blend), thinly sliced or shredded
  • Optional: 1 teaspoon mayonnaise (for the outside of the bread)

Instructions:

  1. Lightly butter one side of each slice of bread with 1/2 tablespoon (7.5ml) of the softened butter. Optional: Spread a thin layer of mayonnaise on the unbuttered side of each slice.
  2. Place one slice of bread, butter-side down, in the skillet. Layer the cheese evenly on top. Top with the second slice of bread, butter-side up.
  3. Place the skillet over medium-low heat. This is key for even melting and golden browning.
  4. Gently press down on the sandwich with a spatula for even contact with the pan. Cook for 2-3 minutes per side, or until golden brown and the cheese is melted and gooey.
  5. Remove from skillet and serve immediately. Slice in half (diagonally, of course!) for optimal presentation.
