Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts, about 1/2 inch thick
- 1 cup (125g) all-purpose flour
- 2 large eggs, lightly beaten
- 1.5 cups (150g) panko breadcrumbs
- 1/2 cup (50g) grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 cups (475ml) marinara sauce
- 8 oz (225g) fresh mozzarella cheese, sliced
- 1/4 cup (25g) grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a baking sheet. Pound chicken breasts to an even thickness.
- Place flour in one dish, beaten eggs in the second, and panko breadcrumbs mixed with Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper in the third.
- Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly with the panko mixture. Press the breadcrumbs to adhere well.
- Arrange breaded chicken breasts on the prepared baking sheet. Drizzle with olive oil. Bake for 20-25 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
- Remove from oven. Spoon marinara sauce evenly over each chicken breast. Top with mozzarella slices and a sprinkle of Parmesan cheese.
- Return to the oven and bake for 5-10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil leaves (if using) and serve immediately.
