Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, about 1/2 inch thick
  • 1 cup (125g) all-purpose flour
  • 2 large eggs, lightly beaten
  • 1.5 cups (150g) panko breadcrumbs
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups (475ml) marinara sauce
  • 8 oz (225g) fresh mozzarella cheese, sliced
  • 1/4 cup (25g) grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a baking sheet. Pound chicken breasts to an even thickness.
  2. Place flour in one dish, beaten eggs in the second, and panko breadcrumbs mixed with Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper in the third.
  3. Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly with the panko mixture. Press the breadcrumbs to adhere well.
  4. Arrange breaded chicken breasts on the prepared baking sheet. Drizzle with olive oil. Bake for 20-25 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
  5. Remove from oven. Spoon marinara sauce evenly over each chicken breast. Top with mozzarella slices and a sprinkle of Parmesan cheese.
  6. Return to the oven and bake for 5-10 minutes, or until the cheese is melted and bubbly.
  7. Garnish with fresh basil leaves (if using) and serve immediately.
