Ingredients:
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and cubed
- ¼ teaspoon salt
- 3-4 tablespoons ice water
- 1 cup goat cheese, softened
- 1 cup aged cheddar cheese, grated
- 3 large eggs
- 1 cup heavy cream
- ¼ cup fresh thyme leaves
- Salt and freshly ground pepper to taste
Instructions:
- In a mixing bowl, combine flour and salt.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Gradually add ice water until the dough forms. Shape into a disc, wrap in plastic, and chill for 30 minutes.
- Preheat the oven to 375°F (190°C).
- On a floured surface, roll out the chilled pastry to fit the tart pan. Transfer to the pan and trim excess.
- Line the pastry with parchment and fill with weights. Bake for 15 minutes, then remove weights and bake for an additional 10 minutes until golden.
- In a bowl, whisk together eggs and heavy cream. Fold in goat cheese, cheddar, thyme, salt, and pepper.
- Pour the filling mixture into the pre-baked tart shell.
- Bake for 25-30 minutes, or until the filling is set and slightly golden.
- Allow tart to cool for 10 minutes before slicing. Serve warm or at room temperature.
