Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ¼ teaspoon salt
  • 3-4 tablespoons ice water
  • 1 cup goat cheese, softened
  • 1 cup aged cheddar cheese, grated
  • 3 large eggs
  • 1 cup heavy cream
  • ¼ cup fresh thyme leaves
  • Salt and freshly ground pepper to taste

Instructions:

  1. In a mixing bowl, combine flour and salt.
  2. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water until the dough forms. Shape into a disc, wrap in plastic, and chill for 30 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. On a floured surface, roll out the chilled pastry to fit the tart pan. Transfer to the pan and trim excess.
  6. Line the pastry with parchment and fill with weights. Bake for 15 minutes, then remove weights and bake for an additional 10 minutes until golden.
  7. In a bowl, whisk together eggs and heavy cream. Fold in goat cheese, cheddar, thyme, salt, and pepper.
  8. Pour the filling mixture into the pre-baked tart shell.
  9. Bake for 25-30 minutes, or until the filling is set and slightly golden.
  10. Allow tart to cool for 10 minutes before slicing. Serve warm or at room temperature.
